Cabbage Sabzi


1 medium head cabbage, shredded
2 tbs vegetable oil
2 tsp cumin seed
1 tsp mustard seed
1 onion, sliced into half-rings
2 tbs ginger, minced
4 cloves garlic
3 Serrano peppers, slit down the sides
1/2 tsp turmeric
1 1/2 tsp salt
1 cup water

Heat the oil over medium-high heat in a large saute pan. Add the mustard and cumin seeds and cook until they pop, just a few seconds. Reduce the heat to medium and saute the onion until it begins to brown. Add the ginger, garlic and peppers. Cook until aromatic, then add the cabbage, turmeric, salt and water. Bring to a boil and simmer until the cabbage is cooked and the water has mostly boiled off. Remove the peppers if desired.

Ragi Rotti


Ingredients
2 cups ragi (nachni / red millet) flour
1 chopped onion
1 chopped tomato
1 slit green chilli
1 tbsp chopped coriander (dhania) leaves
1/2 tsp cumin seeds (jeera)
salt to taste

Method
Mix ragi flour, onion, tomato, chilli, coriander leaves, cumin seeds and salt in a bowl.Add water into the mixture so that the mixture becomes a smooth batter.
Take one big spoon of the batter and spread it over tava and spread the ghee to all the sides.Cook on a slow flame till it is cook from both the sides.
Serve hot.

Omlettes


Ingredients

6 eggs
1/2 cup frozen mix vegetables
2 green chillies
salt and chilli powder to taste
2 tsp oil
1/2 cup grated processed cheese
Salsa (optional)
coriander (dhania) (optional)

Method
Preheat oven 300 degrees
In a deep bottom non stick pan heat the 2 tsp oil(on stove top)
Saute the veggies with chillies for 2 minutes(you may add salsa at this point)
Whisk eggs with salt and chilly powder and keep aside
Add the egg mixture to the fried veggies and put in the oven
After 5 minutes add grated cheese to the baked omlette and turn off the oven
Cheesy omlette are ready
Can be eaten as whole or with parathas, bread or toast

Brown Bread


ingredients
250 g Whole Wheat Flour
10 g Fresh Yeast
3/4 tsp Sugar
1 tsp Butter
3/4 tsp Salt
Warm Water

Take the flour and sieve it.
Add sugar, yeast and a little warm water to the flour and wait for 5 minutes.
When bubbles start coming on top, put butter and salt in it and make soft dough, by adding some warm water. Knead it for 2 minutes and keep it aside for approximately 20 minutes.
After 20 minutes, work on the dough again, for a few minutes and give it the shape of a loaf.Press it in the greased loaf tin.
Wait for 25 minutes and then bake the bread in oven for 10 minutes, at a temperature of 200 degrees C.
Reduce the temperature to 150 degrees C and further bake it for 15 minutes.
Your brown bread is ready.

Palm Sugar - Agar Agar


ingredients,
Agar -agar strands -20g( wash to soften)
Palm sugar/ dark brown sugar -150g
Screw pine leaf -1
Water-5cup
Coconut milk-220ml
Fresh Milk-50ml(optional)


In a pan,add washed agar agar strands,screw pine leaf,palm sugar and water to boil.
Cook in simmer till the sugar and agar agar dissolve in water and turn to a golden syrup.Give a stir occasionally.
Once the syrup is half from its original ,remove from heat.Discard the screw pine leaf.Sieve the syrup into another pan.Place on heat again and add coconut and fresh milk.Simmer for 2-3 minutes before pouring on mould or cake pan.
Let it cool in room temperature then place it refrigerator.

Cheese Dosa



Ingredients:
50 gm Cheese (grated)
1 cup Urad Dal (soaked for 5-6 hrs.)
1 Onion (finely chopped)
2-1/2 cups Raw Rice (soaked for 5-6 hrs.)
3-4 Green Chilies (finely chopped)
1/2 tsp Salt
Oil for cooking
Fresh Coriander Leaves(chopped)
1 tsp Fenugreek Seeds (soaked for 15 mins.)

Make a smooth paste of separately soaked fenugreek seeds, rice and dal.Mix salt to the paste and leave it covered for 8 hours.Grease a griddle lightly with oil.
Pour the batter on the griddle with a ladle and spread in a circular motion immediately with the help of ladle back.
Sprinkle with oil on the sides and then cover it with a lid for few seconds.
Remove the cover and add a tbsp of grated cheese, bits of green chilies, onion and chopped coriander.
Fold over the cooked Dosa and put off the flame.
Cheese Dosa is ready.

Potato Pancakes


Ingredients:
4 Potatoes -- shredded
1/4 cup flour
1/2 cup sour cream
Salt
1 Egg
Onions to taste


Shred potatoes and dry in paper towels.
Mix all ingredients together.
Spoon in hot oil and turn when browned..

Eggnog Bread


eggs
1 cup sugar
1 cup dairy eggnog
1/2 cup butter, melted
1/4 tsp. nutmeg
2 tsp. rum extract
1 tsp. vanilla
2 1/4 cup flour
2 tsp baking powder

Preheat oven to 350 degrees.
Grease bottom of bread pan.
Beat eggs, add sugar, eggnog, butter, rum and vanilla.
Blend well, add flour, baking powder and nutmeg.
Stir until just moistened. Pour into greased pan.
Bake at 350 degrees for 45-50 minutes or until toothpick comes out clean
Cool 10 minutes. Remove from pan. Cool bread completely before slicing.

Ice-cream pudding



Ingredients
2 x 395g cans sweetened condensed milk
50g (1/2 cup) coconut milk powder
1 x 600ml ctn thickened cream
360g coarsely chopped mango flesh
1 large mango, peeled, thinly sliced
1 x 40g pkt Golden Days Natural Products Sesame Snaps, broken into shards

Line a 2L (8-cup) capacity pudding basin with 2 layers of plastic wrap, allowing the sides to overhang.
Use a balloon whisk to whisk together the sweetened condensed milk and coconut milk powder in a large bowl. Add the cream and chopped mango, and whisk until well combined. Pour the cream mixture into the lined basin. Cover the surface with the overhanging plastic wrap and place in the freezer for 8 hours or until firm.
Place a serving platter in the freezer. Dip the basin in hot water for 1 minute toloosen the ice-cream. Turn pudding onto platter and place in the freezer for 20 minutes or until firm.
Top the pudding with the mango slices and sesame snap shards. Serve immediately.
