Milk Paysam
Milk - 4 cups
Sugar - 1/2 cup
Bread slices - 2 - 3 nos
Vermicelli(Semiya) - 1 cup
Dried raisins(Onakka munthiri) - 1/2 cup
Cashewnuts(chopped) - 1/2 cup
Ghee - 1 cup
Cinnamon(Karugapatta) powder- 2 tsp
Cardamom(Elakka) - 2 nos
Boil the milk on a very low flame.Take the vermicelli and crush into small pieces(about 1 inch pieces)Add it to the milk and leave it to boil slowly.
Tear the bread slices into pieces.
Put the bread pieces in a chopper and grind, until very fine.
This should be fine to avoid lumps.
If the bread is a few days old, it will give better results (more absorbent).
Melt ghee in a small pan.
Add dried raisins and chopped nuts and stir fry on a low flame, until the raisins are plump and the nuts are brown. Keep it aside.
When the vermicelli becomes soft, add the ground bread, a handful at a time and stir constantly.
The more bread you add, the thicker the paysam will be.
Crush the cardamom and cinnamon together and put in the milk mixture.
Add sugar and pour in the fried raisins and nuts along with the ghee.
Keep mixing as the ghee will take some time to blend in.
Add more sugar / bread or cardamom according to your requirements.

Cold Coffee
Ingredients
1 cup milk
3 tbsp. instant coffee
1\2 cup chocolate ice cream
few cherries or strawberries
Combine milk and instant coffee beverage mix in blender, blend until dissolved.
Add ice cream and blend until smooth.
Garnish with grated chocolate and cherries or strawberries

Chocolate Malted Milk Shake
INGREDIENTS
1/4 cup malt powder
1/2 cup chocolate syrup
2 lg. scoops chocolate ice cream
1/2 cup cold milk
Combine all ingredients in a blender or milk shake machine. Blend at medium speed for 2 minutes and pour into a tall glass.

Mango Milk Shake
Ingredients
1cup fresh or frozen mango pulp, chilled
1\2 tsp. vanilla extract
2 cups milk, chilled
3 cups vanilla ice cream
Place mango pulp, vanilla extract and 1 cup milk into a blender and blend until smooth. Add vanilla ice cream, with the motor running, add remaining milk and blend, until it is thoroughly mixed.
Pour the shake into the glasses with a straw. Serve immediately.
Note: Fresh mangoes may not be available in winter. You can always store Mango pulp during the season. These days super markets also sell frozen mango pulp.

Vanilla Milk Shake
Ingredients
1 cup milk , chilled
21\2 cups vanilla ice cream
1 tsp. vanilla essence
This drink must be prepared right at the time of serving. Few hours before preparing the drink, put the empty glasses in the freezer. This will give them this frosty look, people would love !
Place the vanilla ice cream and extract into a blender. With the motor running, add the milk, until it is thoroughly mixed.
Get the glasses from the freezer, put them on the serving tray. Pour the shake into the glasses with a straw. Garnish with grated chocolate and maraschino cherries. if desired. Serve immediately.

Vegetable Salad
Ingredients
4 cucumbers
4 tomatoes
1 medium onion
3 carrots
1 small lttuce
2 large green bell peppers
2 large red bell pepper
3\4 cup olives, pitted
1 tsp. salt
1\2 tsp. pepper
2 tbsp. lemon juice
2 tbsp. olive oil
Tear the lettuce leaves into large pieces. Cut the tomato into wedges. Half the cucumbers and carrots lengthwise, then slice them thinly. Thinly sliced the onion. Half bell pepper, remove seeds and cut into thin slices.
Place the lettuce leaves tomatoes, cucumber, onion, olive and bell pepper in a salad bowl.
put lemon juice. olive oil, salt and pepper together in a screw top jar and shake well. Pour the dressing over the salad. Toss lightly and serve.

Ramadan Kofta
in Islamic calendar, the month of Ramadan is considered holy and Muslims from all over the world fast during this month. The holy month of Ramadan also has great impact on Muslim culture. In many countries, people make special arrangements to pray together and listening holy Quran being recited during these prayers. Special food is prepared to end the fast each day.
Since Muslims are spread all over the world so their local customs and local cuisines also affect their recipes and the menu of Iftar Dinner. Some ingredients such as Dates are common almost everywhere. In many countries Muslims break their fast by eating a Date to follow the way of Prophet Muhammad.
Ingredients :
1 lb. lean ground beef (less than 10% fat).
2 medium onions, finely chopped.
3 Tablespoons flour.
1 cup oil for frying.
5 eggs.
½ cup parsley, finely chopped.
2 Tablespoons rice.
1 teaspoon salt.
½ teaspoon black pepper.
Allspice (Optional)
Method :
Sauté the onions and 2/3 of the ground beef in 1 tablespoon of oil for five minutes.
Boil the rice in one cup water until very soft; drain. Remove the ground beef from heat and pour into a mixing bowl.
Add the remaining ground beef, cooked rice, parsley, salt, pepper, and three eggs. Mix with your hands and knead the ingredients well.
Moistening your hands with a bit of water, take egg-sized pieces of the kofta mixture and form into 1-1/2 inch meatballs.
Preheat oil over medium heat in a large, heavy bottom frying pan. Place the flour on a plate and dredge the kofta in flour.
Beat remaining two eggs and roll the flour-covered kofta in the egg mixture. Fry the meatballs about six minutes, until they are golden brown on all sides.
Remove to a plate lined with paper towels. Serve with rice, French fries, and green salad.

Upma
upma Rava 1 Cup
Ginger 1 " inch piece chopped finely
Chilies red or Green 2 Nos
Onion medium size 1 No chopped lengthwise
Salt Acc to taste
Oil 2 tbsp.
Water 2 Cups
Seasoning
Mustard Seeds 1 tsp
Urad dal 1 tsp
Channa dal 1 tsp
Hing 1 tsp
Curry leaves few.
Dry roast rava for few minutes & keep aside.Take care not to brown them.
Heat Oil in the same pan & do the seasoning.Add chilies, ginger & Onion fry till translucent.Add salt,water & let it come to boil at which point add the rava gradually. Keep stirring & take care as not to form lumps.simmer the stove,cover & let it cook for 5 minutes. Switch off the stove,combine & Serve hot.

Chocolate Eclairs
It's my favourite dish. Actually, this eclair recipe would make a delicious for use with any chocolate cookie recipe. and elegant enough to serve on any occasion.
Ingredients
Pastry:***
1 cup water
1/2 cup butter, cut into tbsp size pieces
1 cup flour
1/2 teaspoon salt
4 large eggs
***Glaze:***
2 cups powdered sugar, sifted
2 tablespoons melted butter
2 tablespoons melted unsweetened chocolate
1 teaspoon vanilla extract
3 tablespoons half-and-half or milk (more as needed)
Pastry:
combine the water and butter. Bring to a boil over medium heat. Butter should be completely melted. Stir in the flour and salt and cook, stirring until the mixture leaves the side of the pan into a smooth ball. Remove from the heat. Allow to cool , then put into food processor. Add the eggs and process until the mixture is smooth and glossy. Spoon the pastry into a large pastry bag fitted with star tip. Pipe ovals onto a greased baking sheet,
Place in a preheated 400°F oven and bake for 35 to 40 minutes. Remove from oven. Cool, cut in half lengthwise and fill with either prepared stiffly beaten, sweetened heavy cream.
Chocolate Glaze:
Stir together the sugar, melted butter, chocolate and vanilla. Add 3 Tbsp. milk.if needed to make a mixture that is easy to spread.
Top éclairs with the chocolate glaze and chill until ready to serve.

Milk powder - 15 tbsp (200 gm)
Chocolate powder - 7 tsp
Sugar - 1 cup
Butter(Salt less) - 200 gm
Water - 1/2 cup
Melt the butter and keep aside.Nicely mix chocolate powder and milk powder and keep it aside.Melt sugar in 1/2 cup water.On a low flame, add the mix of chocolate and milk powder to the melted sugar and stir continuously.
When the mix comes out almost in the form of a paste, remove from flame.
Add the melted butter and stir nicely for 5-10 Min's.Grease a tray with butter and pour the mix into the tray and keep in the refrigerator.Allow it to cool.
Cut it into pieces.
